Butter-Crunch Cookies
A family favorite preserved from the original recipe book.
Ingredients
- 2 cups butter, softened
- 2 cups sugar
- 3 cups flour
- 2 teaspoons cream of tartar
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 4 cups cornflakes, crushed
- 1 cup pecans, chopped
Directions
- Heat the oven to 350°F.
- In a large mixing bowl, cream the butter and sugar until light and fluffy.
- Combine the flour, cream of tartar, baking soda, and salt. Gradually add to the creamed mixture and mix well.
- Stir in the cornflakes and pecans.
- Roll into 1-inch balls, using about 1/2 tablespoon each. Place 1 inch apart on untreated baking sheets.
- Bake for 10 minutes.
- Cool for 2 minutes before moving to parchment paper.
