Butter-Crunch Cookies

A family favorite preserved from the original recipe book.

Makes8–12 dozen

Ingredients

  • 2 cups butter, softened
  • 2 cups sugar
  • 3 cups flour
  • 2 teaspoons cream of tartar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 cups cornflakes, crushed
  • 1 cup pecans, chopped

Directions

  1. Heat the oven to 350°F.
  2. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  3. Combine the flour, cream of tartar, baking soda, and salt. Gradually add to the creamed mixture and mix well.
  4. Stir in the cornflakes and pecans.
  5. Roll into 1-inch balls, using about 1/2 tablespoon each. Place 1 inch apart on untreated baking sheets.
  6. Bake for 10 minutes.
  7. Cool for 2 minutes before moving to parchment paper.
