Cornflake Chicken

A family favorite preserved from the original recipe book.

Ingredients

  • 4 chicken breasts, sliced
  • 3 cups cornflakes, crushed
  • 2 eggs, beaten
  • 1 teaspoon each paprika and salt
  • 1/2 teaspoon each onion powder and garlic powder
  • 1/4 teaspoon each black pepper and cayenne pepper
  • 1/3 cup flour
  • 1 cup vegetable or sunflower oil, or cooking spray

Directions

  1. Crush the cornflakes in a zip-top bag or food processor to the consistency of panko.
  2. Mix the seasonings together and set aside.
  3. Divide the seasoning: mix half into the flour and half into the cornflakes.
  4. Coat each chicken strip in flour, then egg, then cornflakes.
  5. To bake: place on an oiled wire rack over a baking tray, spray with oil, and bake at 390°F for 15 minutes.
  6. To fry: fry in 1 cup oil, then place on a wire rack.
