Cornflake Chicken
A family favorite preserved from the original recipe book.
Ingredients
- 4 chicken breasts, sliced
- 3 cups cornflakes, crushed
- 2 eggs, beaten
- 1 teaspoon each paprika and salt
- 1/2 teaspoon each onion powder and garlic powder
- 1/4 teaspoon each black pepper and cayenne pepper
- 1/3 cup flour
- 1 cup vegetable or sunflower oil, or cooking spray
Directions
- Crush the cornflakes in a zip-top bag or food processor to the consistency of panko.
- Mix the seasonings together and set aside.
- Divide the seasoning: mix half into the flour and half into the cornflakes.
- Coat each chicken strip in flour, then egg, then cornflakes.
- To bake: place on an oiled wire rack over a baking tray, spray with oil, and bake at 390°F for 15 minutes.
- To fry: fry in 1 cup oil, then place on a wire rack.
