Go-To Chicken
A family favorite preserved from the original recipe book.
Ingredients
- 2 chicken breasts, cut horizontally
- 1 1/2 tablespoons butter or olive oil
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 tablespoons flour
- 1/3 cup wine or broth
- 2 tablespoons butter
- 1 tablespoon parsley
Pan sauce
Directions
- Mix the seasonings in a bowl and sprinkle on both sides of the chicken, together with the flour.
- Melt butter in a pan. Cook the chicken for about 2 1/2 minutes per side, until deep golden. Remove to a plate.
- Add wine to the pan and simmer rapidly for 1 1/2 minutes, scraping the bottom.
- Add butter and salt; mix well.
- Serve the chicken with the sauce and sprinkle with parsley.
The handwritten note says this would also work well with pork chops.
