Go-To Chicken

A family favorite preserved from the original recipe book.

Ingredients

  • 2 chicken breasts, cut horizontally
  • 1 1/2 tablespoons butter or olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 tablespoons flour
  • 1/3 cup wine or broth
  • 2 tablespoons butter
  • 1 tablespoon parsley

Pan sauce

Directions

  1. Mix the seasonings in a bowl and sprinkle on both sides of the chicken, together with the flour.
  2. Melt butter in a pan. Cook the chicken for about 2 1/2 minutes per side, until deep golden. Remove to a plate.
  3. Add wine to the pan and simmer rapidly for 1 1/2 minutes, scraping the bottom.
  4. Add butter and salt; mix well.
  5. Serve the chicken with the sauce and sprinkle with parsley.

The handwritten note says this would also work well with pork chops.
