Grilled Chicken Caprese
A family favorite preserved from the original recipe book.
Ingredients
- 1 tablespoon red wine vinegar
- 3 tablespoons plus 2 teaspoons olive oil
- Kosher salt and black pepper
- 1 small shallot, finely chopped
- 1 cup corn kernels
- 1 pint grape or cherry tomatoes, halved
- 4 (6-ounce) boneless, skinless chicken breasts
- 2 pounds tomatoes, sliced
- 6 ounces fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
Directions
- Heat the grill to medium-high and lightly oil it. Whisk the vinegar, 3 tablespoons olive oil, and 1/2 teaspoon each salt and pepper. Stir in the shallot, corn, and grape tomatoes; set aside.
- Rub the chicken with the remaining 2 teaspoons olive oil, season with salt and pepper, and grill until cooked through, 4–6 minutes per side.
- Arrange the sliced tomatoes, mozzarella, and chicken on a platter. Spoon the corn mixture and its juices over the top and sprinkle with basil.
