Grilled Chicken Caprese

A family favorite preserved from the original recipe book.

Ingredients

  • 1 tablespoon red wine vinegar
  • 3 tablespoons plus 2 teaspoons olive oil
  • Kosher salt and black pepper
  • 1 small shallot, finely chopped
  • 1 cup corn kernels
  • 1 pint grape or cherry tomatoes, halved
  • 4 (6-ounce) boneless, skinless chicken breasts
  • 2 pounds tomatoes, sliced
  • 6 ounces fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves

Directions

  1. Heat the grill to medium-high and lightly oil it. Whisk the vinegar, 3 tablespoons olive oil, and 1/2 teaspoon each salt and pepper. Stir in the shallot, corn, and grape tomatoes; set aside.
  2. Rub the chicken with the remaining 2 teaspoons olive oil, season with salt and pepper, and grill until cooked through, 4–6 minutes per side.
  3. Arrange the sliced tomatoes, mozzarella, and chicken on a platter. Spoon the corn mixture and its juices over the top and sprinkle with basil.
