Turkey Pot Pie

A family favorite preserved from the original recipe book.

Ingredients

  • 4 tablespoons butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 5–7 tablespoons flour
  • 2 cups turkey stock
  • 1 tablespoon herbs
  • 1 1/2 cups diced cooked potatoes
  • 2 1/2 cups chopped turkey
  • Salt and pepper
  • 2 (9-inch) pie crusts
  • Milk, for brushing

Directions

  1. Heat the oven to 400°F.
  2. Melt the butter in a large saucepan over medium heat.
  3. Add the onion, celery, and carrots; sauté for 2 minutes.
  4. Stir in the flour and bring to a boil, stirring constantly, for 4 minutes. Add the stock and boil.
  5. Reduce heat to medium and add the peas, potatoes, turkey, and herbs. Season to taste.
  6. Line a pie dish with one crust. Ladle in the filling and top with gravy.
  7. Add the second crust and crimp. Cut vents in the top and brush with milk.
  8. Bake for 30–40 minutes and cool for 20 minutes.

The handwritten note says the recipe is usually tripled and freezes well; bake directly from frozen.
