Turkey Pot Pie
A family favorite preserved from the original recipe book.
Ingredients
- 4 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 5–7 tablespoons flour
- 2 cups turkey stock
- 1 tablespoon herbs
- 1 1/2 cups diced cooked potatoes
- 2 1/2 cups chopped turkey
- Salt and pepper
- 2 (9-inch) pie crusts
- Milk, for brushing
Directions
- Heat the oven to 400°F.
- Melt the butter in a large saucepan over medium heat.
- Add the onion, celery, and carrots; sauté for 2 minutes.
- Stir in the flour and bring to a boil, stirring constantly, for 4 minutes. Add the stock and boil.
- Reduce heat to medium and add the peas, potatoes, turkey, and herbs. Season to taste.
- Line a pie dish with one crust. Ladle in the filling and top with gravy.
- Add the second crust and crimp. Cut vents in the top and brush with milk.
- Bake for 30–40 minutes and cool for 20 minutes.
The handwritten note says the recipe is usually tripled and freezes well; bake directly from frozen.
